Less than 25 minutes, no preheating, and no oil!

I love the mix of flavors in this easy chicken recipe. The brightness of the lemon pepper, the savory of the herbs de Provence, the subtle heat and sweetness of the paprika... Makes a delicious addition to your main dish!

This post starts with a bit of a confession: my husband and I eat a lot of chicken. Like so much chicken that we could be chickens. Like a lot. I find it's the easiest meat to cook quickly, fewer calories, and usually a much cheaper option than red meat, although I do love a good steak!

If you have cooked chicken at the ready, there are just so many meal options available to you! Mediterranean chicken wraps/bowls, chicken with mashed potatoes and veggies, chicken tacos, some sort of pasta with chicken and sauce, etc.... it all comes together!

There is one recipe that I make all the time, tried and true and I'm gonna share it with you! That wasn't meant to rhyme but here we are!

Easy Chicken Recipe - Air Fryer Edition

(Can also be made in a convection oven)

  • Chicken Thighs (we usually go with skinless/boneless but bone-in/skin-on felt much more substantial for tonight's dinner, we also added some drumsticks to mix it up)

  • Salt

  • Pepper

  • Herbs de Provence

  • Hot Hungarian Paprika

  • Garlic powder

  • Lemon Pepper

spices laid out

  1. Lay your chicken out on a cookie sheet so that you can season it up right nice! Getting all the crevices.

  2. On one side of your chicken, sprinkle lemon pepper, garlic powder and paprika.

  3. Flip chicken over and sprinkle salt, pepper and herbs de Provence.

  4. Get your air fryer basket and place your chicken in it - no preheating in this recipe!

  5. Put the basket back in the air fryer and set the temperature to 375°f and time to 11 minutes.

  6. When the 11 minutes is up, flip your chicken and set for another 11 minutes. Chicken is done cooking when it reaches an internal temperature of 163°f (I say 163°f because the chicken will continue to cook after you take it out - nobody likes dry chicken). Every air fryer/oven is different, always test the temperature before eating chicken!

  7. Take chicken out of air fryer and let it rest on a cutting board or plate for 5-10 mins before eating.

Voila!

Tips:

  • I didn't put measurements next to the spices because its an eyeball game! Cooking should be fun and about experimentation... not precise like baking.

    • Like more garlic? Add more!

    • Like your food less salty? Cut back on salt.

  • I don't pre-heat my air fryer, we don't have time for that!

  • I don't use any oil, I find the air fryer makes the chicken crispy enough and I love saving calories!

Now you can build the rest of your meal around the chicken!

For an autumn inspired dish, serve with roasted sweet potatoes and a salad with pomegranate, blue cheese, pumpkin seeds, topped with a lemon, honey, dijon, vinaigrette.
